Switzerland’s best Oeil de Perdrix comes from the canton of Neuenburg. The wine is made from Pinot Noir grapes and after a brief period of fermentation is aged in oak barrels, which gives it its character. With delightful aromas of raspberry and quince, this fine and fruity rosé wine is an excellent accompaniment to aperitifs, hors d’oeuvres, fish, and white meat.
