About the wine
The grapes are carefully harvested by hand and placed in small boxes. Fermentation takes place in temperature-controlled, cone-shaped stainless steel tanks that are open on top. The wine is then aged exclusively in new and used French barrels for 12 months.
Character
Complex aromas of cassis, blackberry, bay leaf, black olive, tobacco and cedar wood. Long, smooth start. Juicy and well-structured mid-palate, harmoniously integrated tannins. Elegant, intense finish, ending with mild cassis and pepper aromas.
Food pairings
Roast duck with olive butter, fillet of beef in batter, rack of lamb with polenta, game dishes, specially selected cheeses.
