The unfiltered Neuchâtel is a specialty from Neuchâtel derived from the Chasselas Fendant Roux vine. It is the first wine of the year, and it goes on sale on the 3rd Wednesday of January.
The lees suspended in the wine make it cloudy to the eye and give it a surprising note of citrus fruits, in particular of grapefruit.
It is served in the same way as the Neuchâtel Blanc: as an aperitif, or at the table, with fresh-water fish. It is excellent with asparagus.
Some drink it when it is very young, full of youthful charm. We like it more mature, with a slightly muted color. In this case, it was bottled during the summer and will last a few years without losing any of its freshness, since the wine’s yeast extends its shelf life.
