Food pairings
Fillet of Hérens beef with morel sauce, venison medallions cooked in génépi liqueur, rack of deer with chestnuts, chamois stew in Cornalin sauce, roasted veal with “crève-à-fous” (potato and beet gratin), or enjoy it on its own as a wonderful “meditation wine.”
Wine style
Woody, structured
Tasting notes
Appearance
Deep dark red with ruby reflections.
Nose
Subtle and, at the same time, intense. With fruity, spicy, smoky notes, and the typical Cornalin aroma of black cherry, accompanied by a Merlot’s peppery accents. The delicate chocolate, vanilla and caramel notes stem from barrel aging.
Palate
This full-bodied, balanced, and rounded Cru delights the palate with silky tannins and a wonderful concentration before tapering off in an incredibly long finish.
Characteristics
Wine-growing region
The wine comes from the vines of four parcels. The Merlot grows in the municipalities of Conthey and Chamoson. The Cornalin thrives in the municipalities of Sierre and Fully. After several years of rigorous pruning and targeted vineyard work, the first harvest for this wine was ready and delivered the desired low yields. The result is a wonderful wine, pure and concentrated, which completely satisfies the enologists at Maurice Gay.
Wine preparation
After an initial warm maceration followed by a traditional winemaking method, the wine was aged for at least 20 months in 228-liter Burgundy barrels made of French oak.
