Varietal Composition:
64% Chardonnay, 18% Pinot Noir (pressed for white wine), 18% Sauvignon Blanc
Vinification:
The Pinot Noir undergoes crushing and destemming before the must is extracted in a very gentle pressing. Juice from the three varietals is vinified separately. Blending takes place only after the wines have fermented and matured for eight months in barrels of new (62%) and one-year-old (24%) French oak. Furthermore, part of the Chardonnay and Sauvignon Blanc (14%) are refined in stoneware containers, a material similar to natural granite.

Brilliant and intense straw-tinted yellow.
Bouquet:
Fine and delicate, of great complexity. Hints of citrus fruits supported by pleasant toasted notes.
Palate:
Full and definite attack. Character and elegance. Persistent and balanced with an excellent structure that makes it appropriate for good ageing.

12–14 °C
Aging:
The Sassi Grossi Bianco 2024 will reach its full expressive potential beginning in summer 2025 and will continue to develop in character through 2031 and beyond if properly cellared.

Varietal composition:
Merlot
Vinification:
The wine is vinified following the traditional bordelaise method with a maceration period of 12 - 15 days at 28 – 30°C. Once the malolactic fermentation is complete, the wine is matured for 15-18 months in barriques of French oak. Frequent racking from the lees allows the wine to be bottled without fining, filtration or other physical stabilization. This may result in slight sediment in the bottle.
Color:
Deep and intense ruby red.
Bouquet:
Harmonic and complex, an intense inviting fruity bouquet of plums and blueberries. With roasted and spicy nuances, and light hints of menthol.
Palate:
Complex and fruity. It combines elegance and a superb structure with ripe and smooth tannins. Long with a good balance on the very persistent finish.
Aging:
The Sassi Grossi 2022 will reach its full expressive potential beginning in spring 2025 and will continue to develop in character through 2035 and beyond if properly cellared. Best if uncorked one hour before serving.
