By German-speaking Switzerland, we are referring to an area comprised of seventeen cantons, which are divided into three wine-growing regions: the western part with Basel and Aargau, the central part with Zurich, Thurgau and Schaffhausen, and the eastern part with Graubünden and St. Gallen. Red grape varieties play a larger role in this region than white ones. The Pinot Noir grapes (also called Blauburgunder) produce highly nuanced, surprisingly powerful red wines and are grown on three-quarters of the vineyards. The white grape varieties, mainly Müller-Thurgau (still called Riesling-Sylvaner in Switzerland), make up only about 25 percent of the wines produced here. Räusling, Gewürztraminer and Grauer Burgunder are some of the interesting white wine specialties from German-speaking Switzerland.
