Vinification: Vinified in the bordelaise style with a maceration period of 8 - 12 days at 28-30°C in stainless-steel tanks. 20% of the wine is aged for over 10 months in 2 or 3 year-old barriques.
Alcohol Content: 13.5% Vol.
Color: Intense ruby red.
Bouquet: Intense, fruity and complex. Smell of red berry fruits and liquorice, with delicate roasted tones.
Palate: Fruity and fresh, a pleasant wine. Very good balance, long at the finish.
Dining Choices: Pasta dishes, red meats and aged cheeses.
Serving Temperature: 16 °C
Aging: The Baiocco 2021 will reach its full expressive potential beginning in summer 2023, and will maintain its character through 2028 and beyond if properly cellared.
