From the Trimmis vineyards of the following families: Peter Gadient-Hugenmatter, Peter Florian Malär-Caprez, Hansjörg Meyer-Bardill, and Beda Meyer.
Grape variety
Sauvignon Blanc. The variety is referred to as a “cépage noble” (“noble grape variety”), a term used by the French to describe the world’s finest grape varieties.
About the wine
12 hours of cold maceration and 6 months of aging in stainless steel tanks with fine yeast, using the Batonnage (‘lees stirring’) process.
Character
Bright yellow with green reflexes. Intense bouquet of cassis, gooseberry, elderberry and nettle. Crisp on the palate, voluminous with juicy acidity and a balanced structure. Very intense, aromatic finish.
Food pairings
Saltwater fish, shrimp cocktail, seafood paella, grilled jumbo shrimp, green asparagus, and as an aperitif.
